Courgette and Cheese Muffins
These Courgette and Cheese Muffins are so yummy and perfect for lunchboxes…
My four year old is going through a phase of not wanting to eat much fruit or veggies and previously, this wasn’t an issue. I am on a quest to get her eating more fruit and veggies and reducing consumption of ultra processed foods so I’ve been experimenting with different recipes. Read on for this delicious Courgette and Cheese Muffins recipe.
Courgette and Cheese Muffins Recipe
Ingredients
1 organic courgette
1 organic egg
1 cup gluten free plain flour
1/2 cup M&S 3 ingredients oat drink
200g organic mature cheese
Salt and pepper to taste (optional)
Method
Preheat oven to 180c
Grate the courgette and cheese into a bowl
Add all the other ingredients to the bowl.
Mix well.
Then add the mixture evenly to a prepared muffin tin.
Bake for around 20 minutes
Cool on a baking rack.
Enjoy warm or cool!
