Gluten and Dairy Free Cinnamon and Vanilla Porridge

My fave breakfast at the moment is this yummy gluten and dairy free porridge. Oats is great to have in the morning because it’s loaded with fibre and will keep you going and feeling fuller for longer as it releases energy slowly.

Gluten and Dairy Free Cinnamon and Vanilla Porridge

  • 100g Gluten Free Oats

  • 1 cup Rude Health Gluten Free Organic Oat Drink

  • 1tsp Vanilla Extract

  • 1/2 tsp Grounded Cinnamon

  • 1 organic banana

  • 1 tbsp Pip and Nut Coconut Almond Butter

  • Desiccated Coconut

  • Organic mixed frozen fruit

  • Honey

Method

  1. Soak oats overnight in the dairy free milk alternative (or milk if you are not dairy or lactose intollerant). This plumps the oats and soften the grains and makes it easier to digest.

  2. In the morning place the oats mixture in a small pan together with the vanilla and cinnamon.

  3. Bring to boil and then turn the heat down and cook for 6 minutes, stirring all the time. You can add more oat drink/milk here if you prefer your porridge to be creamier.

  4. Remove and divide into two bowls.

  5. Top with your favourite toppings, in this case I used organic banana, desiccated coconut, mixed berries, coconut almond butter and a little honey.
