Mango-Mint Green Smoothie

Mint is super comforting and the scent and taste takes me back to my childhood in the Caribbean where breakfast wasn’t complete without a cup of mint tea and no matter the ailment mint tea was the solution.

Mint aids digestion, boosts immunity, treats nausea, helps with a headache and is even good for dental and eye health. You use mint in your cooking and even smoothies too!

Try this delicious and healthy mango-mint green smoothie, I’ve been making it for the past couple days (until I ran out of spinach)... The mint leaves really come out well and makes this smoothie so refreshing!

Ingredients

  • ½ cup frozen mango

  • ½ cup fresh pineapple

  • 1 cup Innocent unsweetened coconut drink (a blend of spring water, coconut milk, rice and a touch of salt)

  • 6 fresh mint leaves

  • 2 handfuls of organic spinach

Method

  • Blend all ingredients together in a large Nutribullet cup until smooth.

  • Pour into your favourite cup and garnish with desiccated coconut and mint leaves.

  • Enjoy!
